If' you're talking classical, I really like Robbie O'brien's approach with building a frame in a mould first, then sanding it on a radius dish for the back and a flat board for the top. Back and top (in this order) are then glued on a solera. To me personally, this is far superior to the traditional...

Thank you very much, Steve. Have you tried gluing without pre-shaping on the solera? It's a more complex shape (the traditional Spanish dish in the centre, with ~1.5in flats around the edges), so might not be as easy to shape as if it was a perfect dome. But worth a try.
